Cherry & almond smoothie



This is such a refreshing, delicious smoothie! Sweet, tart cherries mixed with the nutty, smooth flavour of almonds gives it a real cherry bakewell vibe - finished off with a squeeze of lime, there's so many layers of flavour going on within one glass, I always make 2 or 3 servings so that I can have breakfast ready to go in the week, this is one of my favourites to start the day; make sure you take 5 minutes to sip and savour it.

Ingredients


160g pitted, frozen cherries

125ml coconut milk*

60g greek yogurt (I use 5%)

1 tbsp almond butter

1 tbsp maple syrup

1/2 tsp almond extract*

Juice from 1/4 lime to finish

Pinch of salt



Method


  1. Put all of the ingredients in a blender and whizz up

  2. Use a handful of ice if ingredients aren't frozen for a thicker consistency

Good to know:

  • Keep for up to 3 days in the fridge, ingredients may seperate but that's absolutely fine, I whizz mine up with ice cubes the next day(s) to keep the thick consistency

  • You can use any type of milk or coconut water works well too. Start with 125ml and add a splash more if it's too thick for your liking

  • Almond extract/essence is really popular and can be found by the vanilla extract, usually in the baking aisle. If you don't have any, you can always substitute with vanilla

  • To make this vegan, use a dairy alternative yogurt

  • This has 16g of protein without any added extras, but if you use a protein supplement, 1 scoop of vanilla, chocolate or unflavoured protein would work well
