Fig, ricotta, honey and thyme toast



So many flavours and textures, I love this combination of ingredients and I really believe that putting a little more effort into simple dishes and packing new flavours onto one slice of toast can encourage us to slow down, notice the differentiating textures and tastes and eat more mindfully. It doesn't take much longer than your usual go-to toast toppings - prepare everything whilst your bread is toasting and then pile on and enjoy!

Ingredients


2 slice of your preferred bread (I like this on a simple thin sliced sourdough)

2 heaped tbsp ricotta cheese

1 ripe fig, sliced

1 sprig of fresh thyme, leaves stripped

10g pistachio nuts, roughly chopped

tbsp honey, to drizzle




Method


  1. Toast your preferred bread until golden brown and in the meantime, prepare your toppings

  2. Use the back of a spoon to spread the ricotta cheese over each slice, top with the sliced fig and pistachio nuts. Sprinkle over the stripped thyme leaves and finish with a drizzle of honey

Good to know:

  • Use good quality and fresh sourdough. I buy a loaf ready sliced from my favourite bakery and freeze the slices in portions to last throughout the week

  • Lemon thyme is also really nice here, instead of regular thyme

  • Use whatever nuts you have in the store cupboard, pecans, almonds, walnuts all work well

  • Maple syrup instead of honey is a great swap too

  • Vegetarian
