Hot honey halloumi flatbread



Ready in less than 5 minutes, this makes a perfect quick lunch or light dinner. Salty halloumi is spread lightly with a smokey harissa paste with sweet and slightly spicy hot honey drizzled over. Served in a soft flatbread with creamy hummus and finished with sweet pomegranates and fresh parsley, this will be your new go-to staple for something quick and delicious.


Time to prepare : 5 minutes


Serves : 1


Ingredients

90g halloumi, sliced

1 tsp harissa paste

1 tbsp hot honey (I buy and love this one)

Flatbread

2 tbsp hummus

Pomegranate seeds

Fresh parsley



Method

  1. Pan fry the halloumi on a medium - high heat on both sides until golden. Spread the harissa paste over the slices and drizzle over the hot honey. Allow it to bubble and then remove from the heat whilst you prepare your wrap.

  2. Spread the hummus onto the flatbread and top with the sticky halloumi slices.

  3. Finish with a sprinkle of pomegranate seeds, fresh parsley and an extra drizzle of hot honey.

Good to know/alternatives:

  • If you can't find or don't have hot honey (I buy this one) then just use regular honey and add a pinch of chilli flakes.

  • To make this gluten free, use GF wraps
