
One of my favourite combinations of peanut butter, chocolate and banana. I love golden and caramelised banana but you can also enjoy this without cooking the banana or if you don't have an air fryer, see tips on how to caramelise them in the notes below.

Ingredients
1 slice of sourdough bread
1 banana
1 tbsp peanut butter
1 tsp chopped peanuts
1 tsp dark chocolate, finely chopped
Extra salt
Method
Toast the sourdough bread until golden.
Meanwhile, peel and then slice the banana into coins. Lay on a trimmed sheet of baking paper and air fry* at 200ºC for 8 - 10 minutes until golden.
Spread the toasted bread with peanut butter, top with the warm caramelised banana, chopped peanuts, dark chocolate and a pinch of salt to finish.

Notes
If you don't have an air fryer you can pan fry the banana coins in a frying pan with 1 tsp butter or oil, or under a hot grill for 4 - 5 minutes until golden.
You can also top with the freshly sliced banana, without cooking it.
Cut the baking paper to size to fit your air fryer drawer, as excess baking paper can get burnt.
Use any nut butter or combination of chopped nuts or seeds to top.
Most dark chocolate over 70% is dairy free and vegan but if that's important to you, buy a vegan certified dark chocolate.
